James Eddington began his professional Chefs journey in 1997 when he first opened the
restaurant, Eddington’s of Exeter. James carved out a niche in the small, rural, south western Ontario community of Exeter, by delivering a consistent, high quality, elevated dining experience. His focus on farm to table cooking with quality, locally sourced ingredients, matched with his incredible “joie de vivre”, and community centric approach has proven a winning success. James has been hosting tours with CTT since 2018.
Beyond his local roots, James’s culinary expertise has earned him international recognition; he proudly represents the Australian government as a Lambassador for Meat & Livestock Australia (MLA), showcasing his skill with premium global proteins.
